APPLICATION OF LEAN MANUFACTURING TOOLS AND ICT TO INCREASE PRODUCTIVITY LEVELS AND REDUCE COSTS IN THE BREWING INDUSTRY IN ENSENADA, BAJA CALIFORNIA, MEXICO

This investigation was prepared to evaluate productivity levels because in 2018 there were low rates due inadequate planning the manufacturing stages of a brewing industry, located city Ensenada, Baja California, Mexico. Starting 2019 and 2020, even with presence Covid19, increased. Said increase application lean tools, such as Value Flow Map (MFV), Kanban Kaizen, managing generate an efficient fluid process, thereby increasing competitiveness. In addition, automated system used using Information Communication Technology (ICT) control time improve flow production process. With analysis aforementioned lines highest incidence causes that caused, certain stages, poor productive performance personnel machinery determined, indicating less than 50% thus costs increased, generating great concern directive, managerial supervisory personnel. addition analysis, designed applied, controlled by ICT, help detect when process not optimal, moments which machines performed technical stoppages stopped line.
